I’ve been making this good-looking salad on repeat lately.

It's hydrating, filling, fiber-packed and anti-oxidant-rich, so it's definitely going to my signature dish for the holidays coming up.

I even meal-prep this salad on a Sunday for the week. It stays fresh in the fridge and I simply pair it with a protein, like sesame-flavored turkey burgers or grilled salmon. I always get compliments on how good it looks, and even been asked to meal prep for people on our team!

Ingredients:
  • Green cabbage

  • Colorful carrots

  • Fresh cilantro

  • Fresh ginger

  • Sesame seeds

  • Sesame oil

  • Coconut aminos

  • Garlic powder

  • Fresh lemon or rice vinegar

  • Olive oil

How-to:
  1. Mandolin or finely shred half of a cabbage

  2. Ribbon carrots with a peeler

  3. Chop a big handful of cilantro

  4. Chop a 2" piece of ginger

  5. Mix all together

  6. Add dressing to taste

What I love about this salad is the balance: the crunch of the cabbage mixed with the sweetness of the carrots; the rich flavor of the sesame seeds paired with the freshness of the cilantro and a little heat from the ginger.

Dressing:
  • 2 tablespoons of olive oil

  • 2 tablespoons of sesame oil

  • 2 tablespoons of lemon juice or rice vinegar

  • 1 tablespoon of coconut aminos (soy sauce alternative)

  • 1 tablespoon of Primal Kitchen Teryaki sauce

  • 1 Teaspoon of garlic powder
