I’ve been making this good-looking salad on repeat lately.
It's hydrating, filling, fiber-packed and anti-oxidant-rich, so it's definitely going to my signature dish for the holidays coming up.
I even meal-prep this salad on a Sunday for the week. It stays fresh in the fridge and I simply pair it with a protein, like sesame-flavored turkey burgers or grilled salmon. I always get compliments on how good it looks, and even been asked to meal prep for people on our team!

Green cabbage
Colorful carrots
Fresh cilantro
Fresh ginger
Sesame seeds
Sesame oil
Coconut aminos
Garlic powder
Fresh lemon or rice vinegar
Olive oil
How-to:
Mandolin or finely shred half of a cabbage
Ribbon carrots with a peeler
Chop a big handful of cilantro
Chop a 2" piece of ginger
Mix all together
Add dressing to taste
What I love about this salad is the balance: the crunch of the cabbage mixed with the sweetness of the carrots; the rich flavor of the sesame seeds paired with the freshness of the cilantro and a little heat from the ginger.
